ORIGIN
The grapes that give rise to this wine are from Quinta dos Castelares vineyards in Espada à Cinta. We look for in this wine an aromatic concentration and high acidity through the vines planted to 700m of altitude, in order to surpass all the character of the caste. 

VINIFICATION
The harvest begins in the first days of August to find grapes with high acidity and little sugar. Manual harvesting, the grapes are crushed directly into the pneumatic press in a reducing environment and controlled temperature. The first fermentation takes place with stage off fine sludge and "bôtomage". 

AGEING
After the second bottle fermentation by the classic method, the wine stems about 12 months in the basement of Quinta dos Castelares at a constant temperature of 15° and a humidity of 75%. "Remouage" manual followed by "degorgement glacée" final thinning in bottle. 

TASTE
Thin, persistent bubble with good mousse and vibrant acidity. 

PAIRING TIPS
Excellent as an appetizer, it accompanies very well with grilled fish.
