WINEMAKING:

Upon arrival at the Quinta dos Carvalhais winery, the grapes were separated by variety, submitted to destemming and gently crushed. Free-flowing juice is collected by gravity in stainless steel fermentation tanks with automatic temperature control. Here it fermented for about 6 days, with pumping to ensure the gentle extraction of the skin's aromatic components. After fermentation, part of the chosen mixture was aged in used oak barrels for a period of 12 months, where it remained for 12 months. After preparing the final blend, the wine underwent additional treatments and was bottled.

TEST RESULTS:

It has a ruby ​​tone, with a bouquet of violet and black fruits, as well as hints of spice and oak from the part of the mixture that matured in oak barrels. In the mouth it is a good balance of all components and the elegance of smooth tannins that provide a very lively, stimulating and very pleasant wine.

STORAGE AND SERVING ADVICE:

As with all fine wines from Dão, this wine has a very long shelf life and can remain in excellent condition for up to 10 years. The bottle must be kept horizontally, in a dry and cool place. Serve between 15ºC and 17ºC.

PAIRING WITH FOOD:

Excellent partner for a variety of meat, game and poultry dishes, as well as cheese.
