We charge our two stills with grain neutral spirit and add some water from the local Penwhapple Reservoir. A recipe of 11 botanicals is put into the stills – in one still it’s added to the spirit / water mix and in the other still it’s put in a basket above between the rectifying column and the condenser – and the liquids gently heated. The ‘middle cut’ distillate from the stills is collected and blended together. Water is then added to bring the distillate down to bottling strength before the all important cucumber and rose petal essences are added.
