VINIFICATION: Fermentation is stopped with the addition of neutral brandy keeping the wine in pellicular maceration for 5 months. After this period is made the bleed which is later blended with the press wine.

AGEING: The vintage age of the 40 year old blend ranges from 40 to 50 years of aging in used wooden barrels or casks.

PRODUCTION: 325 liters

CONSERVATION IN PRIVATE CELLAR:Bottle lying at a temperature of 12°C, humidity 60%.

EXPECTED LONGEVITY: These wines are submitted, in their aging, to a natural oxidation process. Thus, there is no evolution after bottling. If the storage of the bottle, after opening, is done properly, this wine will remain identical for many years.

SERVING WINE: At a temperature of 16ºC, as an accompaniment to desserts.... ANALYSIS: 18.7% Alcohol | 5.25 g/l Total Acidity | 3.4 pH | 187 g/l Residual Sugar
